Shawo is a classic example of an Ethiopian natural, fulfilling what we want from it with its fruity, berry profile. In filter coffee, it brings out notes of elderberries and strawberry jam. The espresso, on the other hand, captivates with its taste of sour cherry and marzipan. The speciality of Ethiopian coffees lies in the enormous biodiversity of the coffee plants cultivated there. Only a fraction of these have been identified and classified more precisely to date. The Ethiopian region of Guji has been known for years for outstanding coffee qualities. The Dambi Uddo forest is a fascinating ecosystem where at least 15 different endemic coffee varieties grow under dense canopies in a largely natural ecosystem. Local coffee farmers manage the coffee plants - but only on half of the forest, as the other is too densely overgrown.
All our coffees are traceable back to the farm. We work exclusively with importers who share our values. Only ecologically, economically and socially sustainable coffee enters our roaster.
We always buy our coffee seasonally. Our range changes several times a month to always roast the freshest beans. We want each coffee to highlight the specificity of its terroir.
Roasting is a craft and that's how we practice it. Our roasting team around the German Roastmaster of 2018, Kilian Seger, invests a lot of time in profile development and quality control.
