  • Judith Pastora Santos cultivates the Parainema and Typica varieties on her 3-hectare farm "Valhys" in Los Alpes, Honduras. At an altitude of 1,350 meters, the coffee cherries thrive, handpicked and refined through a unique natural process: After harvest, the cherries ferment for 65 hours in sealed plastic bags before being pulped and undergoing an additional 35 hours of fermentation. The coffee is then carefully dried for 25-30 days on raised beds in the shade. Judith, the second generation of a coffee farming family, works passionately to sustainably produce high-quality coffee and secure a better future for her family.
