Our first coffee from Mexico comes from the Chiapas region and impresses with its unique variety. The washed Maragogype variety develops notes of black tea and mild cashews in the filter. As an espresso, it surprises with a creamy taste of milk chocolate and a hint of dried apple. A versatile pleasure that delights both on its own and with milk.
The Chiapas region in southern Mexico is characterized by altitudes of 1,200 to 1,600 metres, volcanic soils and a temperate climate - ideal conditions for growing high-quality coffee. As is typical for the region, this Maragogype has been washed to develop its characteristic clarity and fine balance. The careful processing reflects the dedication of the local producers and brings out the full aroma of the region. A coffee that authentically conveys the diversity and quality of Mexican cultivation.
All our coffees are traceable back to the farm. We work exclusively with importers who share our values. Only ecologically, economically and socially sustainable coffee enters our roaster.
We always buy our coffee seasonally. Our range changes several times a month to always roast the freshest beans. We want each coffee to highlight the specificity of its terroir.
Roasting is a craft and that's how we practice it. Our roasting team around the German Roastmaster of 2018, Kilian Seger, invests a lot of time in profile development and quality control.
