    Las Moras is a coffee that makes an immediate impression: it doesn't feel light and airy, but rather full, sweet, and remarkably composed. In the cup, it develops a noticeable density that feels almost velvety, while maintaining a consistently clear profile. Its character is strongly influenced by the fermentation process. The two-stage process – first aerobic, then anaerobic – initially builds structure and complexity, and then intensifies the profile: the aromas become more concentrated, the sweetness more pronounced, and the texture noticeably creamier. Instead of emphasizing individual peaks, Las Moras focuses on depth, richness, and a long, intense finish. The final hot/cold quenching stage helps to stabilize this character and precisely define the profile. Those seeking coffees with a lot of structure and a powerful, long finish will find here a profile that deliberately emphasizes richness – yet never feels arbitrary.

  • Las Moras is a regional lot from Huila in southern Colombia. The coffee comes from the highlands around Acevedo and Pitalito, where warm days and cool nights ensure a vibrant, clear cup. The lot includes the Caturra, Castillo, and Colombia varieties – cultivars that continue to define Colombian coffee production. Castillo and Colombia, in particular, represent what Cenicafé has cultivated over decades: robust, reliable plants that still deliver quality in the cup. Huila has two harvest seasons: the main harvest from April to September and the smaller harvest from November to February. Las Moras was harvested during the main season from April to September. After processing, the coffee is sun-dried in a canopy and then finished drying in a silo; it then rests for at least ten days before being shipped. InterAmerican Coffee is the origin partner for this lot, bringing together the region's contributions to create a cohesive and reliable profile.
